Kombucha, also known as fermented tea, is a beverrage made by fermenting green or black tea with sugar, yeast, and beneficial microorganisms for at least 14 days. This process creates a drink with a slightly sour, mildly sweet, and distinct flavor and aroma. During fermentation, a flexible, jelly-like layer called SCOBY(Symbiotic Culture of Bacteria and Yeast) forms on the surface of the tea. This SCOBY, sometimes called 'mushroom tea' due to its appearance, helps break down sugars into nutrients beneficial to the body's internal sytems.
