Kombucha, also known as fermented tea, is a beverrage made by fermenting green or black tea with sugar, yeast, and beneficial microorganisms for at least 14 days. During fermentation, a flexible, jelly-like layer called SCOBY(Symbiotic Culture of Bacteria and Yeast) forms on the surface of the tea.
